The Shepherd’s Soup
Sheep or heavy lamb boiled in vegetable broth with orzo, lemon scented.
Served with a scoop of “xinomizithra” (Cretan soft and sour cheese) ice cream
and chilli chiffonade.


Salad
“Oaxia” Land
Salad in almond Florentine nest containing “stamnagkathi” (delicious Cretan greens),
spinach, cherry tomatoes, “apaki” (smoked pork meat), sundried fig
and thick-grated graviera cheese. Thyme honey dressing.


Accompaniments
“Kali Orexi” (Bon Appetité)
Bread, rusk bites, breadsticks, creamy mousse made of feta, olives and sundried tomato.

“Kalitsounia” (mini pies) with fresh “mizithra” (Cretan soft cheese) and spearmint,
served with a selection of sauces: fig and thyme / sour cherry and cinnamon /
wild berries, cranberries and “arbaroriza” (pelargonium herb).
